Turkish Zucchini Fritters



Zucchini fritters, or Mucver, are one of Turkey’s best known dishes. Served hot or cold, this is a great side dish or an appetizer. There are variations with other vegetables, but this is the most famous.

  • INGREDIENTS
  • 3 medium zucchini, shredded 
  • ½ medium size onion, shredded 
  • 1/2 cup unbleached all purpose flour 
  • 2 eggs 
  • 2 tsp Turkish Delight spice mix, or 1 tsp ground coriander, 1/2 tsp paprika, 1/2 tsp  black pepper
  • 2 Tbsp chopped fresh dill, or parsley if dill isn’t available
  • 1/2 cup feta cheese, crumbled
  • 3/4 cup Greek style yoghurt 
  • olive oil, or a light vegetable oil, to fry


  • INSTRUCTIONS

    1. Mix the shredded zucchinis with 1 tsp salt. Leave to drain for 10 -15 minutes.
    2. Squeeze most of the water out of the zucchini. 
    3. In a bowl, mix the shredded zucchini, onion, flour, egg, ground coriander, dill and some pepper with a fork. Add the crumbled cheese, and salt if needed.
    4. Heat a thick bottomed large frying pan over medium heat. Add plenty of olive oil, about 1/2 inch deep. Scoop out about 2 tablespoons of the zucchini mixture and drop into the frying pan, flattening slightly. Fry until golden brown on both sides, around 5-7 minutes in total. Remove and set on paper towels to absorb any excess oil.

    Serve the fritters with the yogurt on the side.  Tzatziki or toum garlic sauce are perfect for dipping if you want more flavour.
