Quick and Easy Moroccan Chicken






































Flavorful, saucy chicken, perfect with rice or quinoa 

This is the family favourite, known at our house as "saucy chicken with rice"

Ingredients

500gm boneless chicken breast, cut in strips
One medium onion, sliced thin
one clove garlic, peeled and minced
3 tbsp olive oil

2 tbsp Hot Hot Maroc, or Moroccan Magic
1/2 tsp salt, or to taste
1/4 tsp red pepper flakes (optional)
1tbsp light jam - apricot, peach, or marmalade (this is the trick)

minced parsley or cilantro 

Place the chicken strips in a bowl with 1tbsp olive oil, salt, the garlic, and the Moroccan MagicMix and let marinate for 15min.  

Heat the olive oil in a heavy bottomed pan or a deep skillet. Add the chicken, and brown over medium heat. Add the onions, and continue cooking until the onions are translucent.  Add 1/4 cup water, the jam, and red pepper  flakes if using, and cook another five minutes.   Serve sprinkled with the fresh parsley or cilantro.  


Serves 4,  with rice, quinoa, or pitas
