Shopping for food in Morocco is an inspirational experience for any cook.

The markets in Morocco are glorious. The olives from the souk in Marrakech are the best, especially the green olives. There are so many varieties, some flavoured with herbs, some spiced with harissa, and the lemony olives that are best for cooking.

Spices are so important, and you can buy as much or as little as you need - everything is sold by weight, and they are easy to bring home, to have some real Moroccan flavors in your kitchen. 

In every neighbourhood, fresh vegetables - lots of heirloom varieties, freshly picked and brought to market every day.
