Glazed West Coast Salmon



Brilliant, easy salmon dish. Easily doubled to serve four, and is excellent served cold with a salad if there is any left.  The chili sauce gives a nice glaze on the salmon, and you can add some cayenne or red pepper flakes to your taste. 

Ingredients

Salmon fillet or steaks, approx 400 gm
2 cloves garlic, minced
1 tsp lemon juice
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 tsp paprika
1/2 tsp ground coriander
1/4 tsp ground turmeric
1/2 tsp ground cumin


2 tomatoes, cut in wedges - or a handful of cherry tomatoes
1 green or red pepper, cut in 1/2" slices
2 tsp olive oil for pan
optional - 1/2 tsp red pepper flakes
               
1tbsp soy sauce

Drizzle the salmon with the olive oil and lemon juice.  Rub in the garlic and spices, and let marinate 30 minutes to 3 hours.
Heat a heavy bottom pan, and add the olive oil.  Place the salmon in the pan, with the tomatoes and peppers along each side. Cover and cook over medium heat 15 minutes, or until the salmon flakes easily.
Mix the chili sauce and soy sauce in a small bowl, and brush over the salmon.
Place under a preheated broiler for 2-3 minutes, watching carefully, and that will caramelize the surface.
Garnish with fresh lemon slices, and chopped parsley or cilantro. 

Serve with rice or quinoa.
