Menemen - Turkish eggs and peppers
Super simple and easy dish, perfect for brunch or lunch.
Ingredients
- 2 tbsp olive oil- preferably cold pressed virgin olive oil
- 2 medium onions, sliced
- 1 red or green pepper, halved and sliced
- 3 medium tomatoes, seeded and chopped or 8oz can chopped tomatoes
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1/4 tsp black pepper
- Pinch of dried sumac, if available
- 1/2 tsp salt
- 4 eggs
- small bunch parsley or fresh cilantro, mint, or chives, roughly chopped
- 1/3 cup Greek or plain yogurt
- 1 garlic clove, crushed or minced
- STEP 1
Heat the oil on medium in a heavy-based frying pan. A cast iron pan, with an enamel finish, is perfect, and doesn’t require pre-seasoning.
Stir in the onions and peppers and cook until they begin to soften. Add the tomatoes, salt and spices, mixing well. Cook until the liquid has reduced.

Using a wooden spoon, create 4 pockets in the tomato mixture and crack the eggs into them. Cover the pan and cook the eggs over a low heat until just set.
- STEP 3
Beat the yogurt with the garlic and season. Sprinkle the menemen with fresh herbs and serve from the frying pan with a dollop of the garlic-flavoured yogurt.
You can add some red pepper flakes for color, and a bit more heat.
Serve with a crusty Turkish style bread or pitas, some olives, feta cheese, and fresh cucumber on the side. And of course finish with Turkish tea!
