Balinese Bubur Bayam



Warm and satisfying, almost like a risotto, this is a dish you can adapt to use your favourite vegetables.

Ingredients - to serve 6


1 1/2 cups Jasmine rice, or other short grain rice

7 cups boiling water

1 cup green peas, fresh or frozen

1 small bunch spinach, washed and trimmed, or baby bok choy

1  1/2 tbsp. Bali Kiss

1 tsp salt, or to taste

2 tbsp coconut oil  ( or a good virgin olive oil is fine)

Handful of chopped fresh coriander, or chives

1/2 cup Fried or roasted peanuts - optional


Add the rice to the boiling water, with the spices. Cook over medium heat, about 20 minutes. When the rice has absorbed most of the water, almost like congee or porridge, add the vegetables and oil, stir, and cook over low heat another 5 minutes.  Cover and let sit for 5 minutes, and serve  sprinkled with the coriander.

You can also add chopped fried or roasted peanuts just before serving.

Variations -

green beans, in 1 inch pieces, parboiled before adding

diced carrots, cooked till barely tender before adding

Instead of coriander, sprinkle with chopped fresh Thai basil
