Sayur Urab - mixed vegetables Bali style
This is a versatile vegetable dish that you can serve hot or cold. It is also pretty flexible on ingredients - add or subtract vegetables to your taste.
Ingredients
2 cups long beans ( or thin green beans) cut in 1 inch pieces
1 cup carrots, cut into matchsticks
1 cup bean sprouts
1 cup shredded cabbage
2 cups chopped spinach
1/4 cup coconut oil - or other light oil
3 cloves garlic
1 cup thinly sliced red pepper, or a hotter pepper if you prefer
2 tbsp lime juice
1 cup grated coconut, unsweetened
1 tbsp Bali Kiss
1 tsp salt, or to taste

Instructions
Bring a pot of water to the boil, and drop in the beans and carrots. After 2 minutes add the cabbage, spinach, and bean sprouts. Cook 1 more minute, then drain.
In a heavy frying pan over medium heat, add the oil, and saute the garlic and peppers with the Bali Kiss till just tender. Remove from the heat and add the drained vegetables, coconut, and lime juice, and mix well. Taste and add salt if desired.
This can be served hot, cold, or room temperature.
