Pinchos Morunos - spicy chicken kebabs

 Spanish kebabs, marinated Moroccan style. This serves 4 as a tapas, or double the quantity to serve as a main. 



Ingredients

1 lb chicken breast filets

3 tbsp olive oil

2 tbsp lemon juice

2 garlic cloves, crushed

1 1/2 tsp ground cumin

1 tsp ground coriander 

1 tsp paprika

1/2 tsp cinnamon

1/4 tsp turmeric

Salt

Instructions

Cut the chicken in 1 inch cubes, and place in a bowl.  Whisk the remaining ingredients together, and pour the marinade over the chicken, tossing to mix well.  Cover and marinate in the refrigerator for 2-3 hours, or overnight. 

Soak Bamboo skewers in water for about 30 minutes, or if  using metal bbq skewers oil them lightly. 

Preheat the broiler, and thread the chicken on the skewers, reserving the marinade. Grill for 15 -20 minutes, turning frequently, brushing with the reserved marinade. When cooked through, and browned on all sides, serve sprinkled with chopped parsley.
