Satay - easy grilled skewers for the barbeque, Balinese style Chicken Satay
Indonesian Satay is so quick and easy, you can serve a selection of meat, chicken, and tofu for a crowd.
Ingredients - to Serve 6
6 boneless, skinless chicken breast halves -
2 tbsp coconut oil or olive oil
2 tbsp. Bali Kiss
2 tbsp light soy sauce
Cut the chicken breasts into 1 inch cubes, or thin strips. Mix the remaining ingredients in a glass or plastic bowl. Add the chicken, stir to coat, and let marinate, covered, in the refrigerator 30 minutes, to overnight.
Thread the chicken on bamboo skewers that were soaked in water to prevent burning. Cook on a grill or the barbeque, turning regularly, till cooked through
Sprinkle with chopped chives and cilantro, and serve with jasmine rice and peanut dipping sauce.
For a vegetarian option, marinate cubes of firm or extra-firm tofu, and grill until deep golden brown, about 15 to 20 minutes, turning regularly.
